One Pan Mexican Supper

One Pan Mexican Supper
6 servings @ 4 points each

Brown Rice 
½ cup @ 3 each



Ingredients 
½ lb lean ground beef
15 oz can light red kidney beans, rinsed/drained
14 oz can diced tomatoes w/ green chilies
1 pkg low sodium taco seasoning
¾ c frozen whole kernel corn
(¾ c water, 6 T FF sour cream)
6 T chopped fresh cilantro 
3 c cooked brown rice



Directions 
Brown beef in a large sprayed skillet. Stir in beans, tomatoes, taco seasoning, corn & water; bring to a boil. Cover; reduce to simmer for 12 min or until slightly thick, stir often. Divide into 6 servings and serve each over ½ cup brown rice. Top each with 1 T FF sour cream & cilantro 




Cantaloupe
1 cup @ 0 each 

6 c diced cantaloupe, serve on the side (we added fat free whipped cream for a yummy dessert!)

Chicken Tostadas. Ole!


Ingredients (all from Aldi!):
Southwestern Bean Salad (see pic below)
Refried Beans (Fat Free)
Lettuce or Spinach
Tomato
Sour Cream (Fat Free)
Shredded Cheese (any kind - fat free)
Chicken Breasts or Tenderloins
Corn Tostadas (see pic below)
Taco Seasoning (1/2 to 1 packet)
Water

Directions:
1. Cook chicken on grill or in skillet
2. Place refried beans and Southwestern Bean Salad in separate pots on stove.  Cook on low to medium heat as needed
3.  Shred your lettuce or spinach and chop your tomatoes
4.  When chicken is browned and cooked thoroughly, add taco seasoning and water (as package calls for).
5.  When chicken and both beans are finished cooking, start building your tostada!
6.  Layers as seen below, refried beans, chicken, shredded cheese, shredded spinach, tomatoes, sour cream.
7.  You can add whatever else you want to customize your chicken tostada!

Taco Cups

Taco Cups
Prep: 10
Cook: 10
Points Plus: 1.5 per cup 


Ingredients:
1 pound of ground meat (we used turkey)
1 package of taco seasoning
1 cup of lowfat or fat free Mexican blend shredded cheese
1 cup of chunky salsa
1 15oz can of black beans
24 wonton wraps (these are in the produce section)









 

Preheat oven to 375. Brown meat in large skillet. Once browned, add taco seasoning and mix well. Add cheese, salsa, black beans and mix well with meat. Spray muffin pan with Pam and line each cup with 1 wonton wrapper. Spoon in meat mixture. Cook for 10 minutes or until shells are slightly browned and crispy. Makes 24 Taco Cups. Add sour cream, tomatoes, lettuce, cheese as you see fit (don't forget these are extra points!)
