Jalapeno Cheese & Potato Bake

Jalapeno Cheese & Potato Bake
3 servings @ 5 points each
Source: eMeals Portion Control

Ingredients 
1 diced red pepper 
1 diced med onion
(1 t minced garlic, ¼ t salt, ¼ t pepper)
½ of a 20 oz bag Simply Potatoes® Homestyle slices
4 oz RF jalapeno cheddar cheese, shredded 
¼ c chopped cilantro








Directions 
Sauté peppers & onions in a med sprayed pan; about 5 min. Add garlic, sauté 1 min more. Arrange half of potatoes in a sprayed baking dish; sprinkle w/ half of salt & pepper. Spread half of pepper/onion mix and ½ of cheese on top. Repeat procedure w/ remaining ingredients. Cover; Bake 50 min @ 400 remove cover last 10 min. Sprinkle with cilantro

Healthy Living: Dining Out Tips

Weight Watchers isn't about a diet, it's about living a new healthy lifestyle.  Each week I receive their newsletter that often includes tips on how to live a healthy lifestyle, recipe ideas, and even workout tips.

My favorite thing about Weight Watchers is that I can still be me.  If a friend is celebrating, I can celebrate too!  There is no need to feel deprived in your new healthy lifestyle.  If I weren't able to dine out or have a piece of cake every once in a while, I wouldn't be successful. 

While it may be about losing weight in the beginning, Weight Watchers has taught me how to be a better me all the time.  Once the weight is off, I want to be able to live without having to worry about it coming back.  I have been taught (and am still learning each day) how to live a healthy lifestyle, and keep off the weight, while still enjoying life. 

If you can relate or have any questions about Weight Watchers, please don't hesitate to ask.  One thing I would love to do is to pass on my knowledge to you, so that you too can feel good about yourself again!

Long-term Weight Loss

So you've lost weight, now what?  Lose weight and keep it off! Or just beginning your weight loss journey?  Planning ahead is the key to success! My husband sent out an email to a group at his work who is just beginning their weight loss/healthy life style journey and I thought I'd share!


Sadly, the statistics for long-term weight loss success are not good. Recidivism with diet plans is worse than that found in our legal system. Only about 20% of individuals who lose weight (10% or more of their body weight) are successful in keeping that weight off for one year. You can combat this by planning ahead:

·      Choose a diet that you will be able to follow for a lifetime. Don’t set yourself up for failure by choosing a diet plan that is so restrictive that it’s not reasonable to follow on a long-term basis. Your goal should be to learn how to eat, not just to lose weight.
·      Learn to splurge! If you allow treats while you’re losing weight, you will learn how to balance them into your diet and not fall back into bad habits after you reach your goal.
·      Once you get started on your diet, focus on healthy eating, not just the scale. Make sure you are getting the right balance of nutrients and your weight will take care of itself.
·      Make exercise a part of life. Exercise is not just for weight loss. Everyone, regardless of weight, should get at least 30 minutes of moderate exercise five days a week. Find something you love to do, and keep doing it after you’ve reached your scale goal.
·      Set non-scale goals. If you are only focused on a weight goal, you may find yourself struggling once you’ve reached that goal. Create new challenges for yourself in your fitness regimen, your job, or even in community service. Setting non-scale goals while you’re losing weight will get you into the habit, and will help you keep your focus after you’ve reached your goal.

It’s so important to always look ahead. You may be setting up your groundwork now – from good foundations come good infrastructure. I reached my goal in January, and I’ve experience some of this first-hand. However, I’m determined to not fall into the traps I did before. I WILL be part of the 20%, and I know you can all do it too.
