Pasta Salad
6 servings at 6 Points Plus per serving
Ingredients:
8 oz rotini pasta
(1 T balsamic vinegar, 2 t
olive oil,
½ t dried oregano, ½ t salt, ½
t pepper)
3 tomatoes, diced
1 oz fresh basil, chopped
1 c part skim mozzarella block
cheese, diced
Directions:
Prepare pasta as directed. Mix
balsamic vinegar, olive oil, oregano, salt & pepper together and toss with
pasta. Add remaining ingredients & mix well. Divide into 6 servings.
Toasted Parmesan Wedges
6 servings at 2 Point Plus per serving
Ingredients:
3 pita pocket bread (FF
cooking spray)
3 T Parmesan shredded cheese
Directions:
Spray pitas w/ FF spray;
sprinkle 1 T fresh shredded Parmesan on each. Broil for 3 – 4 min, cut each
pita into wedges. Serving: ½ of 1 pita
We added a turkey burger patty with BBQ sauce for protein and it made a great meal! We had plenty of leftover pasta and it was even better the next day and the Toasted Parmesan Wedges are an AMAZING addition to any meal.
